Blueberry Kale Banana SmoothieMy kid is just like any other and is reluctant to eat all of the green stuff I put in front of him, so I have been forced to resort to some creative measures. My recipe for Blueberry, Kale, Banana Smoothie is one of those. With kale being all the rage these days (check out National Kale Day), its hard to think of yourself as a good parent if you don’t get your kid to eat some of the magical green leaves at least a couple of times a week.

This recipe is adapted in part from 50 Shades of Kale. I needed something a little sweeter for The Kid, so I modified it part by adding the ripe banana. There are a whole assortment of great recipes in the book if kale is new to you or even if its not. My take follows below. All ingredients should be organic when possible.

 

Blueberry Banana Kale Smoothie in BlenderBlueberry, Kale, Banana Smoothie

5 ice cubes

10 oz. frozen wild blueberries

1 ripe banana

1 cup whole milk

1 cup orange juice

1 cup green kale (or one or two large leafs)

 

Blend all ingredients until smooth. Makes enough for three servings.

    You really are the natural dad! I love this!! Its rare to see a parent (specifically the dad) be involved in his kids nutrition. Way to go! Two thumbs up from this mama! 😀

      It makes about 5-6 cups, depending on the size of the fruit you’re using. In my opniion, that’s about 2 servings (my husband and I split this most mornings).If you’d like it sweeter, as someone asked above, just add more grapes or some pineapple. No need to add processed sweeteners.
